Recipe: Loaded Oatmeal Cookies

Ingredients
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup brown sugar
  • 1/3 cup creamy natural peanut butter 
  •  2 eggs
  • 1 1/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups oats
  • 2 cup semisweet chocolate chunks (chunks are better than chips)

Instructions

1.     In a large bowl, cream together the butter, brown sugar, and peanut butter until smooth. Beat in eggs. Combine the flour, baking soda, and salt; stir into the even mixture. Mix in the oats and chocolate chips.
2.     Chill for 2 hr
3.     Preheat the oven to 325 degrees F (165 degrees C).
4.    These guys are crumbly- roll them into round balls and press hard to make flat. Bake for 15-18 minutes, depending on thickness in the preheated oven.  




This recipe turned out great! I would cut back on the honey and peanut butter. But otherwise, it makes for a great breakfast snack (it's basically oatmeal in cookie form) and it tastes great sprinkled over plain Greek yogurt.
