Recipe: Instant Pot Glutinous Pork Rice Bowl

I combined two recipes from the Instant Pot Recipe Booklet (Steamed Ribs with Glutinous Rice and Steamed Pork Ribs with Crushed Rice) to make an easy to make, easy to eat Glutinous Rice Bowl! This dish was also inspired by the Lo Ba Beng (卤肉饭) I had yesterday at the Taiwanese eatery 886!

Ingredients

  • Glutinous Rice
  • Pork Ribs
  • Soy Sauce
  • Oyster Sauce
  • Shaoxing Cooking Wine
  • Ginger Paste
  • Salt
  • Sugar
  • Garlic


1) Prep your glutinous rice the night before. Soak 1/2 cup of glutinous rice in 2 cups of water overnight or for at least 8 hours.

2) Marinate your pork ribs in a mixture of soy sauce, oyster sauce, shaoxing wine, ginger paste, salt, sugar, and garlic overnight.

3) When ready to cook, drain your glutinous rice and place in a heat-resistant bowl.

4) Add the marinated ribs to the heat-resistant bowl. Mix the contents together. (Optional: add a star anise for additional flavor)

5) Place the steaming rack inside your Instant Pot. Fill the Instant Pot with 2 cups of water.

6) Place your heat-resistant bowl containing the glutinous rice and ribs on top of the steam rack. Set your Instant Pot to [steam] for 55 minutes.

7) Do a natural release: Wait 10 minutes before releasing the steam.

8) Enjoy! Feel free to add toppings like soy sauce eggs and pork belly, as you like!
