Recipe: Frozen Lemon Bars

I had been brainstorming what to make with some leftover lemons and a can of sweetened condensed milk when I came across the perfect recipe for lemon bars!

I tweaked the ingredient list ever so slightly to make them frozen lemon bars. That's right! Frozen Lemon Bars. 

It's more like a custardy lemon ice cream pie than a lemon bar. Give it a try for yourself and let me know what you think in the comments :)

Ingredients:
  • 4 to 5 lemons
  • 1 can of sweetened condensed milk
  • Heavy whipping cream
  • Graham crackers, crushed and crumbled
  • Butter
1. To create the crust, melt half a bar of butter in the microwave and then add to an 8 x 8 glass plan with crushed graham crackers. Mold the mixture into the bottom of the pan evenly. Let it cool. 

2. To create the filling, first juice about 4 to 5 lemons. (Adjust depending on how much of a lemon flavor you enjoy!). Add the lemon juice to 1 can of sweetened condensed milk and 3/4 cup of heavy whipping cream. Mix thoroughly. (I recommend using an electric mixer for best results.) 

3. Add the filling to the crust. Leave in the freezer overnight.
