Recipe: Scallops with White Wine Sauce

As much as I love the taste of scallops, I found it difficult to replicate the delicate sear at home. After much trial-and-error, I have found a simple and foolproof way to make delicious scallops. 

Ingredients
  • Scallops
  • White Wine
  • Butter
  • Garlic
  • Lemon
  • Cream
1) Dry the scallops with paper towels. This step is KEY to achieving a nice sear. 
2) Heat butter in a pan until sizzing! Again, the sizzle is crucial for optimal searing. 
3) Sear scallops in the pan, 2 minutes on each side. Remove scallops from heat once cooked. 
4) Add more butter to the pan, along with minced garlic. 
5) Then add 1/2 cup of white wine.
6) Stir continuously. Add some heavy cream (or parmesan cheese) to taste. 
7) Turn OFF the stove. Then add a squeeze of lemon juice. 
8) Pour the finished sauce over the scallops. Enjoy!

PSSST... This sauce also pairs wonderfully with pasta. I'd recommend a thin, long pasta like a spaghetti, capelli, or linguini for optimal flavor.
